Paleo Vegan Chocolate Ice Cream


I just don't like the heat! I LOVE summer, but only when it's 70-85 degrees. Gosh I'm picky, aren't I? I guess I can handle 90, but no more than that! I don't even want to go to the pool when it's that hot! Let me just reiterate, I do love summer.

Changing subjects, I had to work this morning. And today is Sunday. Remember, I'm a Pediatric RN, and I work at a clinic. And our clinic is open 365 days per year! I quite literally considered not taking this job because of that fact. This is just a part of my job that is not my favorite, plain and simple. It really could be worse. I am thankful for my job as it is a great clinic with wonderful people. Yes, these kids do need us, and yes, I do care about them. But, I'm not thankful to work on Sundays or on my one holiday per year. Anyone out there whose pediatric clinic is open 365 days per year, keep in mind what a wonderful service this is and thank that doctor, RN, Medical Assistant, Receptionist, and whoever else, for being there! Only in pediatrics will you find this type of availability.

So, I went to work, and it was not a bad day at all. But as I sat there on the not-too-bad-Sunday-work-day, waiting for noon to come so that I could go home, I dreamed about what treat I could make this afternoon.

I wanted to make cookies, but back to that hot summer day thing: It's 99 degrees today. And, uh, we don't have air conditioning at our house! What?! You heard me right. I mean, we live in Oregon, after all, and we only get these terribly hot days about 2 months out of the year. And even then, it's usually only about a week's worth of them. We have an older house, and it doesn't have AC, and that's that. Someday, maybe we will put AC in, but for now, we've prioritized other projects.

So, back to being at work and dreaming about treats. Of course, I landed on making ice cream, because then I wouldn't have to turn the oven on! And you guys, this ice cream REALLY turned out good. I mean, really very good. My kids love it, my husband loves it, and I love it. Using coconut sugar provides a slight toasted marshmallow taste. Best of all, it has no less than THREE superfoods: Avocado, coconut cream, and raw cacao powder!

Side note: I threw on some roasted, salted macadamia nuts, and this elevated the whole thing to the next level! Holy smokes, it was awesome.

Paleo Vegan Chocolate Ice Cream

Tools needed: Blender, ice cream maker

Prep time: 10 minutes

Churning time: 20-30 minutes

1 medium avocado, pitted and skin removed

3 cans full fat coconut milk, cream part only

1/2 cup raw cacao powder

1 cup coconut sugar

1/4 cup water

1 tsp vanilla extract

In your blender, combine the avocado, coconut cream, cacao powder, and vanilla extract. Blend until smooth.

In a small saucepan, combine the coconut sugar with the 1/4 cup water. Heat until just boiling and the coconut sugar dissolves.

Add the coconut sugar and water mix to the blender, and blend again until combined.

Pour into the ice cream maker, and churn until desired consistency. Store in freezer.
