Grain Free Pumpkin Spice Waffles

Do you ever read a blog post for a recipe, and wish the author would just get to the point and give you the recipe, already?

If so, today is your lucky day! Some of it is because I'm low on time, and I want to get this awesome Fall recipe to you before it turns into Winter. And some of it is, to give you a break from having to read too much.

So. Very quickly. Why do I love these waffles? Well, who doesn't love pumpkin spice in the Fall, first of all. Second, they are high in protein and incredibly satisfying! Not like those waffles that fill you up for 30 minutes, and then you are hungry again. And finally, there is no refined sugar, but the kids don't even care! Huge win.

So, here you go! I usually double this recipe, so that we can store the leftovers in the fridge and use them for breakfast during the week.

Grain Free Pumpkin Spice Waffles

6 eggs (I use pasture raised)

1 cup blanched almond flour

1/2 cup arrowroot powder

1/2 cup organic pumpkin puree

1/2 cup coconut milk

1/4 cup coconut flour

1/4 cup softened ghee (you may substitute butter or coconut oil)

1 tsp pure vanilla extract

1 tbsp honey

1tsp baking soda

1/4 tsp sea salt

2 tsp ground cinnamon

1 1/2 tsp ground ginger

1/2 tsp ground nutmeg

1/4 tsp ground cloves

1/4 tsp ground cardamom


1. Combine all ingredients into a blender carafe, in the order listed (we use a Vitamix). Blend well, until completely mixed. Batter should be somewhat runny; let it sit about 5 minutes to allow it to thicken a bit.

2. While batter sitting to thicken, heat your waffle iron to medium high heat*.

*note: many waffle irons have non-stick coating. This coating has proven to be very toxic to the body. Try a ceramic waffle iron like this one. It is every bit as effective, if not more so!

3. Once waffle iron heated, brush on some ghee or butter. Pour batter into the waffle iron, spreading evenly, taking care not to overfill.

4. Close the lid and allow to cook 1-2 minutes, or until golden brown.

5. Top as desired! We love maple syrup, grain free granola (or check out my own homemade grain free granola here), home made coconut whip cream, and/or any fresh fruit.

Eat, enjoy, repeat!
